Ingredients
- 1kg chicken
- 2 stalks of lemon grass
- 2 inch piece of galangal
- 15 kaffir lime leaves
- 5 bird's eye chilies, smashed
- 3 cups of water
- 150ml evaporated milk
- 3 tbsp fish sauce
- 3 tbsp lime juice
- 1/2 cup of mushrooms
Instructions
- Clean and cut the chicken into small pieces.
- Bring the water to a boil in a pot and add the chicken leaving it to cook until nearly done.
- Add in the lemongrass, galangal, kaffir lime leaves and bird's eye chilies.
- Pour in the evaporated milk and simmer for 5 minutes.
- Add in the fish sauce, lime juice and mushrooms then stirring for another 5 minutes.
- Remove from the heat and serve hot with a side of white rice.
