  1. Soak Yee Mee noodles in warm water until they're soft. After they are done soaking, drain and set aside.

  3. Add sliced onions and minced garlic, saute until they are fragrant.
  4. Next, add the sliced chicken thighs and cook until they are no longer pink.
  5. Add in the mushrooms and saute them for about 2-3 minutes.
  6. Pour 1/2 cup of water into the wok or pan and stir well.
  7. Add in both light and dark soy sauces along with sugar and stir well.
  8. Season to taste with salt and pepper.
  9. Add in the drained Yee Mee noodles and mix well with the sauce and ingredients.
  10. Add in sesame oil, continue stirring until the noodles are cooked and sauce has thickened.
  11. Garnish your dish with some chopped green onions (if desired). Serve and enjoy!
